carrot&lentil dahl mmmm

Ingredients

  • 1 tablespoon oil
  • 1 teaspoon black mustard seeds
  • 1 teaspoon cumin seeds
  • 500g grated carrot
  • 1 litre vegetable stock
  • 1/2 cup split red lentils, washed
  • 1-2 tablespoons crunchy peanut butter
  • 1 tablespoon curry powder
  • salt and pepper, to season
  • low-fat natural yoghurt, to garnish
  • 2 tablespoons fresh coriander


Instructions

Step 1 Heat oil in a non-stick saucepan. Add seeds. Fry until mustard seeds start to pop.

Step 2 Add the carrot. Stir. Let carrot ‘sweat’ for 10 minutes.

Step 3 Add stock and lentils.Simmer for 30 minutes.

Step 4 Add peanut butter, curry powder, and salt and pepper. Simmer until lentils are cooked to a thick consistency.

Step 5 Garnish with yoghurt and fresh coriander. Serve on rice, naan or pita bread.

sweet sweet circus fun....

Id say this will have to be "wordless wednesday" well few very few words.. Im so tired! its been so busy at our little neck of the woods. Which is also nice too. So just a few things i love....

Baked mushrooms....

These are devine!! i baked ours to go with our roast.

Flat Field mushrooms
salt&pepper
chives
basil
bread crumbs
grated Parmesan cheese
butter

preheat oven to 200c fan bake

Just use how ever many mushrooms you have,i was lucky enough to get four large ones for 3.99. yum! is it just northland as they are really expensive here,although oh my you should have seen them growing around here a few months ago,mushroom everything for dinners!!


  • Line a baking dish with baking paper,big enough so each mushroom sits on the bottom
  • sprinkle with bread crumbs so covered
  • sprinkle each mushroom with freshly grated Parmesan cheese right over the top not to waste any down the sides,tut tut!
  • chop herbs and place on top
  • season with salt and pepper.
  • dot generously with butter
  • Bake mushrooms for 15min's or until tender,golden brown and crisp on top.



serve hot too
you can prepare these up to two hours before too.

first ever fluffy.....

i thought about it and decided not to order Cam a fluffy until he could spoon it in himself,i wasn't going to spoon feed him frothed milk.
and that day has arrived...hip hip hooray so we ordered Cams first fluffy,i asked for a naked one,but coffee pops (the local cafe owner as his gran kiddies call him) must have felt sorry for poor Cam getting a "naked fluffy" or didn't hear me as it turned up with a tablespoon of chocolate on it,but it is freshly grated Whittaker's after all. So i had the luxury of reading the paper and enjoying a coffee while he enjoyed a fluffy all to himself. happy mama happy buba.

mama's little helper

its lovely when they reach an age of being able to help you with baking cooking ect,Cam at 11months has reached that age,he loves it!! i love watching him,he so intrigued by all the new things,being allowed to sit up on the bench and he loves mixing!!! bonus for me,happy bb,baking or dinner being cooked = happy mama!!

Thanks to my sweet friend Chloe i recieved to my total suprise (even better) these sweet sweet things in the mail yesterday!!!! thankyou Chloe it felt like my birthday!!!

my love of aprons

i love vintage style aprons what more can i say? they make baking way more fun&everytime i see them sitting above my breadbin all neatly folded reminds me i must get baking! i do like to share too,small ones are perfect for gifts for wee girls we love, i dont have a picture to share but recently a little girl at playcenter turned 5& i cut out a her name in felt&hand stitched it onto my littlest apron ,she loved it! Ones with pockets are great as peg aprons,my nan loves hers.
We plan to have a vintage apron day at the cafe some day soon too.

must do more baking! now that cams crawling,yes crawling,hes just learnt this in the last two weeks. he hangs in the kitchen with me exploring all the cuboards,and i can happily bake.

oh all the plums you can eat!!



my Nana lives up the paddock from us & has a gorgeous plum tree! its way to hot for her now in her wee kitchen& at her age to be doing preserves now,so i gathered up my little boy,up the paddock to Gran-Nana's. we nearly picked the whole tree&cam sat on the grass&slobberd on all the plums he could get his weeny hands on.next was to cams Grammas (dales mum) fabulous kitchen to jam them,sauce them&chutney them!!






what a lovely lovely day&all in a day i learnt how to do all this thanks to dales mum! think i'll give it a go to do some on my own in a few weeks when the tree has ripened again,thatl last us thru the winter&theyll be lots of jars to gift too!
